Potato soup with mushrooms

A traditional Polish potato soup with dried mushrooms – aromatic, hearty, and perfect for cold days.

Soak the rinsed dried mushrooms the day before. Cook them in the same water and slice into thin strips.

Boil the potatoes and cut them into slices.

Pour hot water into a pot with soup vegetables. Add spices and the mushrooms along with their cooking water.

Cook for about 20 minutes until all ingredients are soft and aromatic.

Before serving, sprinkle with chopped fresh parsley.
